Malaga salad


Malaga salad is one of the most emblematic dishes of popular Malaga cuisine.


Easy to make, cheap, nutritious and can be made at any time of the year. It is served cold or at room temperature, depending on the time of year. Once prepared, it should be kept in the refrigerator, well covered.


The origin of this dish is humble. Its main characteristic is that it uses products from the "earth" (potato, spring onion, orange, olive, oil and cod).


This typical dish has other names depending on the area of ​​the province. Thus, it is also known as remojón or salmorejo de invierno, Ensalada arriera or pio antequerano. These variations in the name are also accompanied by their respective variations in terms of ingredients. Although the basic ingredients are respected, there are areas of Malaga where egg or tomato is added, or even, depending on the time of year, the fish is replaced by tuna, a fact that for some loses the essence of the Malaga salad, the cod.


Although it is still prepared today both at home and in many restaurants with an affinity for Malaga cuisine, the truth is that we can find it with desalted cod, fresh or smoked cod, in its most innovative version.


INGREDIENTS

  • 1 kg of potatoes

  • 300 g of cod

  • 5 or 6 oranges from the Guadalhorce Valley

  • Pittly seasoned olives, preferably of the Aloreña variety

  • A glass of water and milk (to desalt and blanch the cod)

  • EVOO (Extra Virgin Olive Oil)

  • Salt

Located on Calle Ángel, where the old El Cenachero club was located.


This street was once decorated for the festivities by Tomás Lavat, brother of the dancer Pepito Vargas. There was also a Convent of Dominican nuns of San Miguel Arcángel in the 12th century, from which its name comes.


On November 28, 1931, the master of alexandrine verse and prominent representative of the generation of the 1950s, the writer and poet from Malaga, María Victoria Atienza, was born here.


There were also historic Malaga shops, such as the famous Papelería Morales and other historic ones such as Zapatería Dover, Galerías Rusadir or Tapicería Suprema.
